Grilled duck breast with smoked barbecue sauce

INGREDIENTS:

10 duck breasts

Barbecue sauce
150g finely diced smoked breast
75g smoked fillet of duck diced into small pieces
210g chopped onions
1 litre chicken stock
A few drops of Tabasco sauce
250g ketchup
20g honey
120g crushed walnuts
Zest of ½ an orange
Juice of 1 orange
Zest of ¼ lemon
Juice of ½ lemon
2 cloves chopped garlic (10g)
30g butter

INTRUCTIONS:

Brown the diced breast, the diced fillet of duck and the walnuts in 15g of butter

Add the onions, caramelise them well without burning them

Add the chicken stock, Tabasco, ketchup, honey, juices, zest and chopped garlic

Cook gently for 20 mins

Add the rest of the butter, keep it warm

Grill the 10 duck breasts using a hot frying pan, plancha or barbecue

Cook them for 3 mins on each side for pink meat

Serve with 2 tablespoons of BBQ sauce
