Cromesquis of Shredded Duck with tip of exoticism

INGREDIENTS Pour 10 personnes

300g shredded duck
1 piece of chopped lemongrass
1 tablespoon of chopped coriander
2 tablespoons of chopped parsley
1 teaspoon of chopped ginger
2 chopped chives
2 tablespoons of potato flakes
100g flour
3 eggs
120g breadcrumbs

PREPARATION

Heat the shredded duck.

Add the lemongrass, coriander, parsley, ginger, chives and potato flakes and mix well

Roll into 20 g balls.

Chill in the fridge for 2 hours.

Heat the fryer to 170°C.

Roll the balls first in the flour, then in the whisked eggs and finally in the breadcrumbs.

Fry immediately, drain in a paper towel and serve.
