Xavier Isabal, Sarrade's ambassador to the other side of the world
The heir of a long line of chefs, Xavier Isabal is today Head Chef of the Michelin-star restaurant Ithurria in the Basque Country. A passionate food lover, he is constantly searching for quality and excellence in his creations. A fervent defender of his terroir and passionate about the region in which he was born, he has chosen Sarrade for its exceptional dishes.
His aim, like his partner Sarrade, is to introduce and reintroduce customers throughout the world to the authentic taste of all the greatest products of our terroir. These include Bayonne ham, a Maison Sarrade speciality, for which it has its own dedicated workshops in the Basque Country.
Asia, and China in particular, is a major consumer of pork meat and one of the brand's main target areas for development, with a specially designed plan to open up the palates of the most exigent food lovers and promote Bayonne ham. To achieve this, our recipes draw on the creativity of Xavier Isabal who assists the brand by creating exclusive creations adapted to the tastes of China. This has led restaurants in Beijing, Shanghai and elsewhere in China to offer a taste of the South West on their menus every day.
